Ingredients

  • 2 1/2 lb. red onion, thinly sliced
  • 1 oz. garlic, thinly sliced
  • 1 qt white wine vinegar
  • 1 1/4 cups sugar
  • 2 tbsp Salt, Kosher

  • Mason Jar

Directions

  1. In small pot add vinegar, sugar, and salt. simmer just long enough to dissolve sugar and salt.
  1. Remove from heat and chill the brine in an ice bath to 40 degrees.
  1. Pour brine over sliced onions and garlic.
  1. Store in refrigerator for 24 hours before use.
