Ingredients

  • 1 9lb. pumpkin

Special Tools

  • Large spoon
  • Food processor or blender
  • Strainer or cheesecloth
  • Bowl

Directions

  1. Preheat your pellet grill or smoker to 300°F.
  1. Cut your pumpkin into 4 equal-sized pieces and remove the seeds with a large spoon.
  1. Wrap each piece of pumpkin in aluminum foil and place on the upper rack of your preheated grill for 1 1/2 hours.
  1. Rotate the pieces every 15 minutes to ensure even cooking. Once pumpkin pieces are fork tender, remove from the grill.
  1. Remove from foil and allow the pumpkin to cool to room temperature.
  1. Using a large spoon, remove the flesh from the pumpkin skin. Add flesh to a food processor or blender and blend until smooth.
  1. Add puree into a strainer or cheesecloth over a bowl and allow excess moisture to drip away for 45 minutes.
  1. Store in the fridge for up to 5 days or freeze for later use.
