Fun and delicious, these chimichurri roasted carrots will look beautiful alongside your favorite proteins for any occasion. Simply seasoned, then topped with a bright and tangy chimichurri sauce, these carrots are packed with flavor and super easy to make! You have to try them for yourself!

Ingredients

  • 3 bunches rainbow carrots
  • 1 1/4 cup chopped parsley
  • 3 Garlic Cloves
  • 3 dried bay leaves, crushed
  • 1 tbsp dried oregano
  • 3/4 tsp red chili flakes
  • 3/4 tsp black pepper
  • 3/4 tsp Salt
  • 3 tbsp red wine vinegar
  • 1/3 cup avocado oil
  • Pit Boss All Purpose GSP Rub

Directions

  1. In a food processor, combine parsley, garlic, bay leaves, oregano, chili flakes, salt, pepper, vinegar, and oil until combined. set aside.
  1. Remove the tops of the carrots and cut the larger carrots in half, long way, so all carrots are an even size.
  1. Preheat pellet grill to 400°F
  1. Toss your carrots in a bowl with 1/4 cup of your homemade chimichurri.
  1. Place the carrots directly on the upper rack of your grill and rotate as needed so they cook evenly. Sprinkle with Pit Boss GSP (or garlic, salt, and pepper).
  1. Once the carrots are fork tender, remove from the grill and cover for 3-4 minutes before serving.
