Ingredients

  • Russet potatoes
  • Olive oil
  • Garlic powder
  • Onion powder
  • Cayenne pepper
  • Shredded cheddar cheese
  • Bacon bits
  • Sour Cream
  • Green onions, sliced thin

Special Tools

  • Wire rack

Directions

  1. Preheat your pellet grill or smoker to 400Ā°F.
  1. Slice potatoes into 1/2 inch thick coins and place in bowl. Add olive oil and seasonings, enough to coat well.
  1. Place potatoes on a wire rack and bake in your smoker for 30-40 minutes flipping half way through.
  1. When coins are tender, top with shredded cheese and bacon bits.
  1. Place back in smoker until cheese has melted.
  1. Remove from smoker, garnish with sour cream and onion, and enjoy!
