Smoking your chicken wings on the Pit Boss will add an unmatched wood-fired flavor that will keep you coming back for more. Plus, cranking up the heat and finishing the wings over an open sear plate will make the skin crispy and delicious, just how we like it!

Ingredients

  • Chicken wings
  • Baking Powder
  • Pit Boss Hot Honey Chipotle Rub

Special Tools

  • Wire Rack
  • Ziploc Bag

Directions

  1. Preheat your smoker to 250°F
  1. (Optional) Place wings on a wire rack and leave in the fridge over night to draw out any moisture.
  1. Dry wing skin out as much as possible by dabbing with a paper towel.
  1. Put wings in a Ziploc bag with 1/2 a teaspoon of baking powder for every 12 wings and seasoning of your choice. We recommend the Pit Boss Hot Honey Chipotle Rub.
  1. Shake bag to coat wings as evenly as possible.
  1. Place wings back on the wire rack to apply an even layer of seasoning to all wings.
  1. Place wings in preheated smoker.
  1. Flip wings every 15 minutes for 45 minutes to allow them to cook evenly.
  1. After 45 minutes, increase your smoker's temperature to 400°F. Move wings to the middle of the smoker to finish cooking and crisp skin.
