Born in New York City, this chopped cheese sandwich recipe is the real deal! Great for your next weeknight meal or gameday snack. This sandwich is cooked entirely on the Pit Boss Ultimate 5-Burner Griddle.

Ingredients

  • 4 Hero rolls
  • 2 lbs ground beef 80/20
  • 4 packets Sazon Goya
  • 8 slices of American cheese
  • 4 cups iceberg lettuce
  • 1 tomato
  • 1 white onion
  • 2 green peppers

Directions

  1. Preheat your Pit Boss Ultimate Griddle to medium-high heat (around 350-400°F).
  1. Dice the white onions and green bell peppers. Add a small amount of butter or oil to the griddle. Place the diced onions and green bell peppers on the griddle and cook until they are softened and slightly caramelized, about 5-7 minutes. Push them to the side to keep warm.
  1. Place the pre-formed beef patties on the griddle.
  1. Season the patties with Pit Boss Bold Burger Rub, Cook the patties for about 3-4 minutes on each side until they reach your desired doneness.
  1. Once the patties are cooked, use a spatula to chop the beef into small pieces directly on the griddle. Mix the chopped beef with the cooked onions and bell peppers on the griddle, ensuring everything is evenly distributed and well combined.
  1. Sprinkle with the Sazon with Achiote packets.
  1. Spread the chopped beef mixture into 8 even portions on the griddle. Place 2 slices of American cheese on each portion of the beef mixture. Let the cheese melt into the beef mixture for about 1-2 minutes
  1. While the beef mixture is cooking, slice the hero rolls in half. Lightly butter the inside of each roll and place them on the griddle, cut side down, to toast until golden brown.
  1. Spread a layer of mayo on the toasted sides of each hero roll. Place a generous portion of the chopped beef, onion, and pepper mixture onto the bottom half of each roll. Top with shredded iceberg lettuce and sliced tomatoes. Add desired amount of ketchup.
  1. Close the sandwich with the top half of the roll. Roll the sandwich tightly in the parchment paper or foil, tucking in the ends. Use a sharp knife to cut the wrapped sandwich in half.
